[Food] Indonesian Apple Pie Making


Resep 1 : Apple Pie yang TerLezat ^^


Bahan Kulit :
  • 275 gr tepung terigu,
  • 175 gr mentega,
  • 50 gr gula bubuk,
  • 2 butir kuning telur,
  • 1/2 sdt garam,
  • 1/2 sdt vanila,
  • 50 ml air es (ato secukupnya) 
Bahan isi :
  • 6 buah aple malang, kupas iris membujur,
  • 2 sdm tepung terigu,
  • 2 sdm maizena,
  • 1 sdm cinnamon bubuk,
  • 1/2 sdt pala bubuk,
  • 150 gr gula pasir,
  • 100 gr kismis,
  • 2 sdm air jeruk manis,
  • 2 sdm margarin,
  • 1 kuning telur utk olesan, campur dng 1 sdm susu cair
Cara membuat :
  1. Aduk semua bahan, dengan pisau pastry ato 2 buah pisau, tuangi air sedikit demi sedikit, aduk sampai adonan kalis.
  2. Bulatkan adonan simpan dilemari pendingin + 1 jam, keluarkan.
  3. Gilas adonan setebal 1/2 cm, ratakan diatas loyang pie 21cm
  4. Campur semua adonan isi sampai rata
  5. Tuang kedalam loyang, ratakan tambahan potongan margarine dibeberapa tempat (menyebar)
  6. Tutup dengan adonan kulit, pijit2 pinggiran loyang sehingga adonan rapat dan membentuk motif, ato potong2 adonan 1.5 x 22cm susun diatas adonan isi, menyerupai jaring2.
  7. Olesi dengan kuning telur. Panggang dalam oven 180C selama 45 menit sampai kuning kecoklatan. Angkat.
  8. Potong2, sajikan.



Resep 2 : Apple Pie TerEnak yang Pernah Ada ^^

 

Bahan Isi :
  • 6 cup apple hijau yg telah dikupas dan diiris,
  • 1 tbs air jeruk lemon,
  • 1 tsp vanili,
  • 1/2 cup gula,
  • 1/2 tsp kayu manis bubuk,
  • 1 1/2 tbs mentega,
  • 1 kuning telur,
  • 2 tsp whipping cream
Bahan Kulit :
  • 2 cup tepung terigu,
  • 1 tsp garam,
  • 3/4 cup mentega putih,
  • 4-5 tbs air dingin,
  • 1 tbs tepung kanji/maizena

Cara membuat Kulit :

Ayak tepung dan garam, masukkan dalam baskom berisi mentega putih.
Uleni dengan pastry blender hingga menggumpal2.
Tambahkan air, sedikit demi sedikit sambil diuleni dengan tangan/garpu hingga adonan dapat berbentuk bola.
Bagi menjadi dua. Bulatkan.
Gilas salah satu adonan pada permukaan yang telah ditaburi tepung (diameter 12").
Taruh pada dasar loyang 9", rapikan.
Taburi permukaannya dengan tepung maizena.
Gilas adonan sisanya dan bentuk menjadi helai2 daun besar dan kecil.

Cara Membuat Isi :

Campur apel dengan air jeruk lemon, vanili, gula dan kayu manis. Isikan pada loyang dan oles dengan mentega.
Atur dan hias dengan adonan pastry yg berbentuk helai daun sesuai selera.
Oles permukaan adonan pastry dengan campuran kuning telur dan whip cream utk memberi efek mengkilat.
Panggang hingga coklat keemasan.

Apple Pie Crust

Pie Crust Ingredients

 
This recipe calls for:
2 cups all-purpose flour,
I teaspoon salt,
1 tablespoon sugar,
6 tablespoons butter,
6 tablespoons shortening,
6 to 8 tablespoons ice water

HINT : If this is your first time making this pie crust, make a double batch to be sure you have enough crust. 

Pie Crust Utensils

 
For this recipe you will need:
1 Mixing Bowl,
Rolling pin,
Knife,
Measuring spoons,
Measuring Cups,
Dough Blender (in picture, I know, it sounds electric, but it isn't),
Cutting Board,
9 inch Pie Pan (smaller is ok, but no bigger)

First Step: Mixing the Pie Crust Ingredients 


Warm the butter in the microwave until it is soft, but not melted.

Mix in a large bowl:
2 cups all-purpose flour,
I teaspoon salt,
1 tablespoon sugar

Then cut in using the dough blender:
6 tablespoons butter,
 6 tablespoons shortening,
6 to 8 tablespoons ice water

 
This is What your pie dough should look like once you are finished mixing.

Second Step: Chill the Pie Dough

 
Wrap your pie crust in plastic wrap. 
Then place in refrigerator for 20 or more minutes, while you make the pie filling.  

Apple Pie Filling

Now that the pie crust is complete, let's make the world's best apple pie filling. You may use any type of apples, but tart apples work the best. 

Apple Pie Filling Ingredients

 
For the apple pie filling you need:
5 Tart Peeled Apples,
1 Cup Sugar,
2 Tablespoons Flour,
1/2 Teaspoon Cinnamon,
1/4 Teaspoon Salt,
1 Tablespoon Cider Vinegar,
1 Tablespoon Lemon Juice

First Step: Slice Apples

 
Peel and slice your apples.
Soak them in water with a tablespoon of lemon juice.
This will prevent the first apples cut from turning a funky color.

Second Step: Mix Filling

 
Mix in large mixing bowl:
1 cup sugar,
2 tablespoons flour,
1/2 teaspoon cinnamon,
1/4 teaspoon salt,
1 tablespoon vinegar

 
Once you have finished mixing these ingredients together, they should resemble the picture to the up. 

Third Step: Mix Apples

 
Now, drain the water off of the apples and mix them with the spices.

 
Now that you have finished the filling, it is time to assemble your pie.

Put the Pie Together

Now that you have made the pie dough and apple filling, let's put this pie together! Make sure your pie crust has been at least 20 minutes in the refrigerator before assembling the pie.

First Step: Cut 

Now that your pie crust has had plenty of time to cool, divide it into two, equal halves.    

Second Step: Rolling Pie Crust

 
Roll one of the balls of pie crust out until it is around 1/8th of an inch thick.

Third Step: Putting Crust in Pie Pan

 
Once you have rolled out the dough, wrap it around the rolling pin and unroll it onto your pie pan.
Once you have shaped it to fit the inside of the pan, take a fork and poke holes in the bottom of the crust. This will let the steam out as the pie bakes.

Four Step: Filling Apple Pie

 
Dump all of the apples in the pie. Place about 4 chunks of butter on top of apple filling. 
This will give the filling rich flavor.

Fifth Step: Putting Top Pie Crust On Pie

 
Ok, we're almost done! Roll out the remaining pie dough and place it on top. 

Six Step: Forming Edge of Pie Crust

 
 Create a pattern around the edge of the pie by using the back of a knife.

Baking the Apple Pie

We're almost done. 
Don't worry, baking an Apple Pie is not the hardest part, but letting it cool before eating it is! 

First Step: Baking Apple Pie

 
Cut long strips of tinfoil and place them around the edge of the pie.

This will prevent the crust's edge from burning while it bakes. You will want to take the tinfoil off about ten minutes before the pie is done. This way, the apple pie will have a golden brown edge.

Bake your pie at 400 degrees for 50-60 minutes.

HINT : Place a cookie sheet covered in tinfoil on the lowest oven rack (not on the same rack as the pie) to prevent any overflow from reaching the bottom of the oven--easy cleanup! 
Second Step: Brush With Egg White

 
For a glossy effect, brush a small portion of egg white on top of the crust when you remove the tinfoil.

Apple Pie Recipe


You will need the following to create your apple pie:
  • 6 small or four large cooking apples (Granny Smith recommended)
  • 8 oz, 225g or 1 3/4 cups all purpose flour
  • Pinch of salt
  • 4 oz, 110g or 1/2 cup cold margarine or cold butter (or half of each)
  • Cold water
  • At least 3 oz, 85g, or 1/2 cup sugar or sugar substitute. The amount of sugar is determined by how sweet the apples are.
  • 3/4 teaspoon ground cinnamon (optional)
  • one egg
  • A pie pan
  • small fruit knife
  • Rolling pin
  • Peeling tool
  • Pastry brush
  • Small cooking pan
  • A table spoon
  • A scale or measuring cups 
 Apple Filling

 
Wash and peel the apples, then core and chop them using a small knife.

Place the apple slices into a pan and sprinkle over 2 oz (50g) of sugar, two tablespoons of water and 3/4 teaspoon of cinnamon.

 
Cook slowly until the apples are soft and ...

  
... place into a suitable container and refrigerate for later use. 

Pie dough (sweet shortcrust pastry dough)

To make the pie dough scale 8 oz (225g) of all purpose flour and 4 oz (110g) of  margarine or butter.
Add a pinch of salt and 1 oz (25g) of sugar.

Using your hands rub the ingredients together until the mixture resembles bread crumbs.

Make a hollow circle in the powdered mix and ...

... add to this approx. 2 tablespoons (30ml) of water.

  
Now gently mix the water into the powdered mix until a paste is formed.
Note: Depending on the flour quality you may need to add a little more water or a bit more flour to reach the desired dough consistency.

 
Knead the dough until the consistency is smooth and neither too hard nor too soft. Roll it into a ball, wrap it in film and let it rest in the refrigerator for about an hour.
Storage: The dough could be prepared the day before and can be kept in the refrigerator for about 3 days.
Mixer: You could of course place everything into a food processor and mix it up that way if you prefer not to get your hands too dirty... :)

Apple Pie - roll out the dough 

 
Get your favorite 9 inch pie pan or pie dish. 


 
Using a rolling pin roll out about two thirds of the dough.
Roll it out to a 1/2 cm (1/5 inch) thickness and until it is large enough to cover the pie dish with a little extra to spare.
Make sure you have dusted the working surface with some flour to prevent the dough from sticking.

Lift the dough gently and flop it over the pie pan and set into place.
Ease the dough all around the pie dish and into the dip.
Now you can add the filling or alternately freeze the pie shell for later use.

Spread the filling evenly into the pie shell.

 
Optional: Add a final sprinkling of sugar onto the apple filling. This really depends on how sweet the apple filling is or how sweet your tooth. 

Cover your Apple Pie

 
Using water or egg wash, wet the dough on the edge of the pie shell.

 
Roll out the remainder of the dough and gently flop it over to cover the top of the filled pie dish.


Using your thumb and fingers press the two pieces of dough firmly together.


 Using a small sharp knife trim the dough by cutting against the edge of the pie pan in a downward fashion.

 
Tidy the edge using your thumb and fingers again.
Make an egg wash using one egg and a pinch of salt. Brush it over the top of the pie.

Baking the Apple Pie



With a small sharp knife stab in a few small cuts in the middle of the pie top.


Optionally, sprinkle some sugar over the pie.
Bake in a pre-heated oven of
* 230 degrees Centigrade,
* 430 degrees Fahrenheit,
* Gas Mark 8
for approx 10 minutes and then
* 190 degrees Centigrade,
* 375 degrees Fahrenheit,
* Gas Mark 5
for an additional 20 minutes or until golden brown.

 
 Leave to cool or serve hot... fresh from the oven.

Apple diet is a popular weight loss diet.

First, why the apple diet works...

A big reason on why the apple diet works has to do with the high water content and high amount of fiber in each apple. The high water content allows you to "eat water" basically. The foods you mostly "eat water" with are generally low in calories, but very filling. For example, a 300-calorie candy bar won't fill you up, but 300-calories worth of apples will.

Another reason why the apple diet works is because each apple has 5 grams of fiber in it. It has both soluble and insoluble fiber. Having a high fiber intake is a big part of successful long term weight loss programs.

It's recommended that you get 25 grams of fiber each day for our daily need. I, however, advocate getting 35-50 grams of fiber each day for easy long term weight loss.

There are 2 rules to the apple diet...

Rule #1 : Eat 1 apple before each meal

Just eat 1 apple before each of 3 meals. Nothing more. I won't even tell you to stop eating your favorite foods. Obviously, if you eat a little bit more healthy, you'll increase the speed in which you lose weight... but I won't force you to eat healthier.

Rule #2 : Don't forget rule #1

Seriously, there is just 1 rule to the apple diet. However I want to add that I've found that my clients who have tried the apple diet get better results simply by following rule #1 and eating healthy snacks.
That's all you need to change in your diet... eat an apple before each of 3 meals... and eat healthy snacks. You can continue to eat more unhealthy type of foods for your meals. Just don't eat unhealthy snacks!
So, if you want an easy weight loss plan that isn't complicated and doesn't require much thinking on your part, try the apple diet.

Breakfast : Cereal : 1 grated apple ( with skin ) + 1 tbl spoon of raisin + 1 oz of oatmeal + 5 oz of low fat milk.
Between breakfast and lunch : 1 apple.
Lunch : 1 pancake ( 1 oz of flour, 6 tbl spoons of low fat milk) + 1 egg ( salt, sugar substitute or cinnamon is up to you ). Stuffing for pancake: 1 sliced apple.
Between lunch and dinner : 3 oz of low fat yogurt + 1/2 of apple.
Dinner : 1.5 oz of rice mixed with 1 sliced apple and 1/2 banana.

Day 3
Breakfast : 1 slice of rye bread + 2-3 tbl spoons of low fat cottage cheese + 1 apple.
Between breakfast and lunch : A drink made of 1 grated apple + 5 oz of low fat yogurt + juice of 1 lemon + cinnamon.
Lunch : 3 oz of chicken breast or non fat beef covered by : ( boil for 5-7 min ) 1 shred apple + 1 sweet red pepper + 1 tea spoon of lemon juice + 2 tea spoons of sugar + 3 tbl spoons of water. Add salt, pepper + vinegar.
Between lunch and dinner :1 apple.
Dinner : Salad : Slice 2 medium size carrots and 1 apple, add 1 tea spoon of raisin and 2 oz of low fat cheese. Dressing : 2 tea spoons of low fat cream + 2 tbl spoons of low fat milk + about 2 tbl spoons of sugar substitute.

Low-calorie apple diet
This diet will help you losing one kilogram per day.

8.00 – corn or wheat flakes with slices of apple, raisins and one tablespoon of honey or beauty salad.
11.00 – One green apple.
13.00 – add five lettuce leaves to two diced apples, 50 g low-fat yogurt, 1 table spoon olive oil, 1 tsp. apple cider vinegar.
17.00 – One green apple, 50 g unsalted sheep’s or goat’s cheese.
19.00 – one grated apple, sprayed with juice of half a lemon.
